I’ve come up with the perfect pancake recipe! The secret is in the sweet potatoes
2 egg whites
1 scoop whey protein (vanilla)
1/3 cup oats
1/3 cup mashed sweet potato
1 tsp baking powder
1 tsp cinnamon
1 packet truvia
Put all ingredients in a blender or food processor and blend until batter is smooth. Pour batter on a non-stick frying pan just like regular pancakes. Cook for about a minute on each side.
Top with sugar-free syrup and your favorite pancake toppings!
